A center must have a food preparation area designated for the preparation of meals, snacks, or prescribed nourishments. The meals, snacks, and nourishments must be maintained in accordance with state and local sanitation and safe food handling standards. If the center has a kitchen for cooking meals, or for providing meals and snacks directly or under contract, the center must be in compliance with Texas Department of State Health Services rules in 25 Texas Administrative Code Chapter 228 (relating to Retail Food Establishments). The center must also be in compliance with local health ordinances or requirements in the storage, preparation, and distribution of food; sanitation of dishes, equipment, and work area; and in the storage and disposal of waste.
